What is the best career medical assistant, health unit coordinator, or medical transcript?

I am currently going to a community college and I am trying to figure out the best major to go for. I am thinking towards health unit coordinating because it only takes two semesters.What is the best career medical assistant, health unit coordinator, or medical transcript?
I've heard that the job of a health unit coordinator can be quite stressful dealing with all levels of those in the medical field and having to be adept at multi-tasking. With medical assistant (or medical biller or coder), there aren't supposed to be too many jobs out there as the field is saturated with graduates of the numerous programs looking for work. I'm not sure with medical transcriptionist as far as the number of jobs available.
